The other day K and I had a spontaneous and perfect spring evening – a walk around the neighborhood, a little shopping for fresh foods, and then a yummy dinner made while sipping piña coladas and singing along (extra loudly) to Alphabeat.

Of course, by the time dinner was finished we were too full of coconut milk and light rum to be very hungry, but it was a perfect meal regardless.

K’s Infamous Piña Coladas
This recipe is a guesstimate for two – feel free to play around with it to find the right combination for your tastes
- 6 oz light rum
- 3/4 cup coconut cream
- 1 cup pineapple juice
- 2 cups ice
Blend all ingredients on high speed until smooth. Pour into glasses and serve with a straw (or two)!
