As you may recall, in March I began the Dukan diet with two friends.

Things started out very well: I kept myself to the strict protein, vegetable and (lots) of water diet. I changed my eating habits, cut my sugar, carb and fat cravings, and lost 15 pounds in one month.
Then – as it so often does – life got in the way. Do to a number of events, I spent more time out of our house, away from my healthy stocked fridge and lost the strictness that had brought on such success in the beginning . But amazingly, while I added fat and sugar back into my diet, my appetite stayed in check and I didn’t gain back any of the weight that I had lost.

A few weeks ago I decided to get my act together once again, and refocus my engery on a strict meal plan.
I have told you this (long) story in order to share some news: I have now lost 25 pounds in less than three months. Hence, the celebration crepes -

These crepes may look – and taste – incredibly decadent, but the truth is they are Dukan crepes that are filled with nonfat, sugar-free ice cream and low calorie jam. My friend Pilar (who has also braved the Dukan diet with me) and I shared these during brunch this Friday, and “ooohed” and “ahhhed” over every single bite.
So from me to you, here’s my promise: you have more strength than you know, and you can use it to achieve your goals. Okay!?! Now enough sentiment – here’s a recipe for your enjoyment:
Dukan crepes
Makes approx. 6 large crepes
- 2 eggs
- 160 grams skimmed milk powder
- 100 ml sparkling water
Whip the eggs together and add skimmed milk powder slowly. Fully incorporate the ingredients into a thick batter, and then slowly add sparkling water until the batter is smooth and thin enough to pour easily. Pour batter to cover the bottom of a hot non-stick pan (if necessary, oil the pan very lightly with an oiled paper towel) – and cook until top is set and bottom is golden brown. Flip crepe carefully and cook until both sides are golden. Warm in a 100 degrees Celsius oven until all crepes are finished cooking.
Serve immediately with desired toppings – we enjoyed ham slices with nonfat cream cheese as a savory treat.

I just made these….mine were slightly burned (that always happens to me), but they are SOOOOO good! I filled my with sugar free, low-fat chocolate mousse….so delish! Makes me feel like I’m back in Paris enjoying crepes on the Seine! Thanks for the recipe! I love you blog! x
