Lemon Curd Pudding

Last night I went out with my colleagues and after I finished two Dukan friendly courses of meat and veggies, I ended my meal with –

1. The cheese plate

2. 2/3 of the best tiramisu I have ever had outside of Italy

Bad, bad girl.  Ohh, but it felt so good… and I didn’t gain an ounce, so no regrets!

But since I can’t indulge in such {high fat} delicacies all the time, I want to share with you another Dukan dessert recipe that’s fresh and summery and not one bit sinful.

The dessert above is a layered treat: first a layer of vanilla pudding (using this recipe and omitting the cinnamon and rum in favor of vanilla bean) and then a layer of lemon curd, and then a dollop of sweetened fromage frais. You shouldn’t eat much lemon on the Dukan diet, but a dash of this curd will be more than enough to satisfy your craving for zesty goodness.

Low calorie Lemon Curd

  • Juice of 2 large lemons
  • 1/2 cup dry sweetener (or to taste)
  • 2 large eggs
  • 4 tbsp lemon zest

Heat lemon juice in a small saucepan until simmering.  Meanwhile, beat eggs in a small bowl.  Slowly pour hot lemon juice into the beaten eggs, mixing constantly (to avoid cooking the egg too quickly and having unpleasant lumps).  Return the lemon and egg mixture to the saucepan and warm over low heat until thickened.  Add sweetener to lemon curd (to taste is best, this way it reaches your desired sweetness) and allow to cool.  Store in the refrigerator and serve with low fat yogurt, pudding, on a Dukan crepe… or just on a spoon! 🙂

To serve as I did above, spoon a little bit of lemon curd over Dukan pudding and add a dollop of fromage frais that has been sweetened to taste.
