Elderflower summer

Don’t let the cloudy skies and cool temperatures fool you – it is in fact the first day of summer.

Roskilde Festival and Sankt Hans are just moments away, the sky is filled with light nearly all hours of the day, and the elder bushes are bursting with airy blooms that flood your nose with sweetness.

Sunday morning K and I took our favorite puppy Sofus out to pick hundreds of these sweet blooms, and then last night we began the three day process of making elderflower cordial – the perfect addition to anything from a glass of water to homemade vanilla ice cream.

I’ll share the recipe with you this week, and then you can bottle up a little bit of summer yourself!
