Summer salad

I think that this salad is fresh, sweet and sour perfection.

Especially if you happen to be able to get ahold of Danish strawberries, which are truly so delicious I think I could eat them forever.  Just the smell of them is so intoxicatingly sweet and fresh – yummmm.  Add feta, spinach, and a splash of balsamic vinegar, and you my friend, are in for a treat.

I hope you make this salad soon – it’s amazingly simple and lovely, and your roommate, your guests, or even just your own tastebuds, will thank you for it.

Summer strawberry and spinach salad

  • Spinach (rinsed and dry)
  • Sliced strawberries*
  • Feta cheese (virtually nonfat preferably)
  • Balsamic vinegar

Adjust the quantities of the above ingredients to suit your taste and necessary number of servings. Top spinach leaves with strawberry slices and crumbled feta, then drizzle lightly with balsamic vinegar.  Easy peasy.

*If you’re in the first two stages of the Dukan diet, you can omit or limit the berries in this salad – though I think you deserve at least one! It can’t hurt… but don’t tell Dr. Dukan I said that 🙂
