When I have company or am cooking dinner for me and K, I love to go all out in the kitchen.  But when left to my own devices for dinner, I usually go a much simpler route (read: omelette anyone?).

But luckily, simple doesn’t always have to be boring.  Simple can be delicious – and even good for you at the same time!  Take this turkey bacon, lettuce and roasted tomato open faced sandwich for instance – it’s yummy, fresh and easy to whip up for a solo dinner while watching The Glee Project the news…


Makes 1 (feel free to double if you’re super hungry!)

  • 3 slices of turkey bacon
  • 3 medium tomatoes, sliced
  • 1 slice of whole wheat bread
  • 1 lettuce leaf
  • 1 tbsp. low-fat Miracle Whip
  • 1 tsp. basil pesto

Spread tomato slices and turkey bacon slices on parchment on a pan and grill in the oven at 200 degrees Celsius until tomatoes are roasted and bacon is crispy.  Meanwhile toast bread and wash and dry lettuce.  Mix mayo and pesto to blend.  To assemble, spread a thin layer of pesto mayo over the toast, layer with tomato and bacon and top with lettuce.  Serve immediately.
