Since I began the Dukan diet, I’ve shared lots of Dukan dessert recipes with you – from lemon cheesecake to rum pudding to cupcakes. But there are lots of lovely savory Dukan recipes that can be enjoyed as well, and I’d like to start highlighting more of them here on the blog in the coming months.
First up: simple, delicious, Dukan appetizers:
These are simple and quick to make, but they taste delicious (even for non-Dukaners!) and look lovely.
Recipes after the jump…
Dukan Deviled Eggs
- 4 eggs
- 1.5 tbsp cottage cheese, nonfat sour cream, or nonfat mayo (whatever you like!)
- 2 tsp. dijon mustard
- Salt, pepper and paprika to taste
Cover eggs completely with water in a stovetop pot, and place over high heat. Bring water to a boil, then cover pot and shut off heat. Leave eggs covered for approx. 15 min. Remove pot from stove, empty the hot water, and run over the eggs with cold tap water until cool. Once eggs are cool, peel them and slice lengthwise. Spoon out the yolks into a seperate bowl. Mash yolks together with your dairy product of choice, mustard, and salt and pepper until smooth in consistency. Spoon the filling evenly among the egg white boats, and then sprinkle with paprika. Serve cold.
Dukan Ham Wrapped Scallops
- Thinly sliced, lowfat ham
- Salt and pepper
Preheat oven to 375 degrees F (190 degrees C)*. Rinse scallops in cold water, then pat dry with a paper towel. Slice ham lengthwise to create small strips. Wrap each scallop with a thin strip of ham and place on a lined baking tray. Secure ham by tucking the ends under the scallop, or skewering them with a toothpick. Once all the scallops are covered, sprinkle with salt and pepper. Bake for 15 min or until browned and crispy. Serve warm.
*These would also be perfect to BBQ over an open grill in the summer!
