{Vegan} Chocolate Glazed Doughnuts

Can we talk about doughnuts for a moment?  Because they’re delicious.  But forbidden right? Delicious and forbidden.

Well, not anymore.  Because these doughnuts are delicious – and they don’t have the fat, the excessive sugar, the guilt.  They aren’t forbidden… in fact, I’m encouraging you to make them, and eat at least two, immediately!!

Baked Vegan Chocolate Doughnuts

Recipe via (never home)maker 

  • 1 cup rolled oats, processed into flour
  • 1/4 cup pecans (processed with oats)
  • 1/4 cup maple syrup
  • 3 tablespoons cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking sodapinch salt
  • 1/2 cup almond milk
  • 1-1/2 teaspoons vanilla extract
  • Ener-G egg replacer (plus required water) for one egg (or 1 egg)

Preheat to 350 degrees F.  Lightly grease a mini bundt pan (or doughnut pan, if you have one).  Put all ingredients in a bowl and mix well.  Pour into five of the six bundts (I need to rework the recipe to make more — trust me, it’s so good, I’m making more today).  Bake for 12 to 14 minutes, until slightly firm.  Let cool in pan and then turn over to pop out.

Vegan Chocolate Doughnut Glaze

Recipe adapted from (never home)maker

  • 2 tablespoons oil
  • 1/2 cup powdered sugar
  • 2 tablespoons cocoa powder
  • 2 to 3 tablespoons almond milk
  • 1 teaspoon vanilla extract
  • 1 tbsp. Kahlua {optional, but encouraged!}

Blend all ingredients until smooth {a blender works wonders for this}.  Transfer to a bowl.  Dip the tops of cooled doughnuts into glaze, and allow to set for an hour or so before serving.

    So… Let’s say I’m really trying to be good and eat healthy stuff – these would be ok to eat? Guiltfree? And I can convince people with solid arguments that it’s ok? OMG!

    The white stuff on top of some of the donuts, is that just coconut flakes?

      Yes! Sorry I wasn’t clear about that – I sprinkled coconut on a few of them and the result was fantastic.

      And yes – they are definitely guilt free and you can convince people easily – since the doughnuts themselves have no gluten, processed sugar, or dairy!! If you find a healthier frosting recipe – please share! 🙂
