Chocolate Covered Banana Pops

For the last few days it has been HOT in my hometown {btw, this statement is the opposite of a complaint}.  Actually it’s so hot that I’m sleeping with the windows open, and trying to lay as far away from my dog Sofus as possible {he’s like a small radiator}.  It’s also so hot that frozen desserts have become less of a want and more of a need. Ya know what I mean?

Enter: the banana pop.  Surely you’ve heard of this concept or made them yourself before, but these babies really are winners. And – they are SO simple. Just peel bananas, slice in half, skewer with popsicle sticks {mine were homemade by my neighbor – thanks Armo!}, and freeze solid.

Once the banana pops are frozen, you can eat them as is, or dip them in chocolate and other goodies {highly recommended}. I personally coated each banana in a layer of Chocolate Covered Katie’s vegan, sugar-free, healthy chocolate {the same I used to make chocolate chips}, and then rolled them in crushed nuts or unsweetened coconut flakes.

They’re so good I’ve already made two dozen, and they’ve been welcomed by friends and neighbors with rave reviews.  New summer staple? I think so.
