{Vegan} Rice Treats

Homemade Rice Crispie Treats are so. freaking. good. I mean, what’s not to love about butter, marshmallow, and crunch? It’s a winning combo.  But are they good for you? Not so much.

But luckily for us, the amazing Katie came up with a vegan version using nut butter and agave!  Healthy, wholesome, vegan, healthy and delicious Rice Crispie Treats?! Count me in!

In my version here, I used puffed brown rice, PB2 {my favorite thing ever: it has 1/10 the fat and calories of regular peanut butter!}, and honey, and then topped them off with a little homemade chocolate.

The result wasn’t the crunchy treats I expected {since I used soft puffed rice instead of crispy – my mistake!}, but it was absolutely awesome regardless.  I’ve eaten quite a few myself, and also shared them with friends and neighbors to great reviews. And with nothing but wholesome, low-fat ingredients, these really are the treats that love you back!

It’s only Monday, and I already feel like I’m winning!
