
Yes, you read that right. Homemade. Strawberry. Mint. Sorbet.

Did I mention it takes just minutes to make? AND that it tastes even better than it looks? Double score.

It’s so refreshing and wonderful, I promise you’ll want to savor it and share it with friends all summer long. You should definitely make it for guests after a dinner party. “Homemade sorbet anyone?” you’ll ask as you clear the table.

Well, color them impressed!!! You’ll be the talk of the town. {It’s really that good.}

Don’t worry - you don’t have to tell them how simple it is, or that it only has 5 ingredients. Shhh, I won’t tell either.
Strawberry Mint Sorbet
Adapted from a recipe by My Green Diet
- 2 cups frozen strawberries, cut into pieces
- 1 frozen banana, cut into pieces
- 1/4 cup lemon juice
- 1/4 cup pure maple syrup {or to taste}
- Around 10 fresh mint leaves, washed with stems removed
- Water as needed
Using a Cuisinart or blender, chop the mint, frozen strawberries and bananas {using the pulse function helps here} until they resemble the consistency of snow cone ice. Then add the lemon juice and syrup to blend into a smooth sorbet. If your mixture remains solid and not smooth, add a few teaspoons of water at a time until it blends into a smooth consistency without any chunks remaining.
At this point, your sorbet will have the consistency of soft serve ice cream. Serve immediately, or scrap into a freezer safe container and save for later. To serve, just allow the frozen sorbet to soften at room temperature for 10 min or so before scooping.
