
Fresh fruit is a blessing – especially when it comes in the form of ripe, ruby-red strawberries – and even more so when on sale in large quantities.

However, in an instant, strawberries can go from fresh to rotten – which is why I think it’s important to have a strawberry game plan.

So, this week I sliced lots and lots and lots of strawberries to freeze and save for future smoothies and sorbet cravings - but I also wanted to find a good use for the berries right away. So – of course – I made pie!

Since I didn’t want to make a pie filled with butter and flour, I pieced together a few different recipes to create a delicious and healthy strawberry cream pie that’s perfect for sharing with friends and neighbors. Here’s how I did it:
{Healthy} Strawberry Cream Pie
Makes one 9 inch pie
- One flour-less crust {a la Chocolate Covered Katie}
- One batch of Dukan-friendly pudding
- As many strawberries as you can find
- Sweetener of your choice {I used granulated Truvia, but regular sugar or another substitute would work fine}
First, I followed Katie’s recipe for a flour and butter-free pie crust. The only changes I made to her recipe were to omit the cocoa powder and add a little extra coconut {since I didn’t want to make a chocolate pie} and bake the crust once it was pressed in the pan {I baked my crust at 400 degrees F for about 12 min – this gave it a caramelized, nuttier flavor}.
Then I made my favorite pudding recipe, but I omitted the rum flavoring and cinnamon and added a little more vanilla and a dash of butter flavor instead. Once the pudding was ready, I poured it into the prepared crust and moved it to the fridge to chill completely.
Next, I sliced strawberries lengthwise {I used a lot – maybe 4 pints?} and tossed them in a bowl with a few drops of water and a tablespoon of granulated Truvia sweetener {again, use any sweetener you like, or omit completely – the strawberries are already quite sweet! I just like the sugar-glazed look}.
Finally I arranged the strawberry slices on the top of the prepared pie in a circular pattern. At this point, I brought the pie over to my neighbors to be eaten, but I suggest you place it in the fridge for at least a few hours to firm up. This pie was delicious, but was too soft to cut into true slices since I didn’t chill it further.
Needless to say – it was delicious and there’s none left!!
