{Dukan} Brownie Pancakes

{Dukan} Brownie Pancakes

Recipe inspired by Chocolate Covered Katie

Makes 3 Dukan Diet Servings*

  • 4 1/2 tbsp. oat flour {or bran**}
  • 1/4 tsp baking powder
  • 1 tbsp fat-free cocoa powder
  • 1 tbsp granulated sweetener
  • pinch of salt
  • 1 egg
  • 4 tbsp non-fat milk
  • 1 tsp vanilla extract

Mix the first five ingredients together in a medium size mixing bowl.  In a separate container, whisk the egg, milk and vanilla together.  Add the wet ingredients to the dry mixture and blend together.  Bake pancake batter in three small batches on a non-stick skillet at medium heat, approx 1-2 min. on each side.  Serve with Dukan toppings of your choice {I used sugar-free Hershey’s Chocolate Syrup and powdered Truvia sweetener}.

*On the Dukan Diet, 1 1/2 tbsp of oat bran are allowed per day. Therefore the above recipe can be made ahead into three pancakes, for three days worth of deliciousness!

**To make oat flour, grind oat bran in a coffee grinder or blender until it has the powdery consistency of flour {shouldn’t take more than 1 min on and off}.
