
This past weekend, Oregon was in full-on summer mode. Here at home, we took full advantage of the wonderful weather, enjoying every possible moment in the sun – including dinnertime of course!

At the end of one particularly long day, my mom and I were at the point of exhaustion where simply standing over the sink eating whatever was in the fridge sounded like a pretty excellent dinner plan. {You know that point?}

But luckily my mom got creative, and in a matter of minutes we sat down to the most amazing and simple dinner:

Instant taco salad {with cold brews, just for fun!}.

Even Mr. Sofus was a very, very big fan!
Instant Taco Salad
- Chopped lettuce
- Sliced cucumbers
- Sliced tomatoes
- Black olives
- Avocado
- Chicken breast, sliced {or another protein}
- Blue corn chips, crushed {optional}
Arrange all ingredients on a plate. Serve with dressing of choice on the side.
Yep, that’s all there is to it!! Because summer meals should be a breeze!

Quality of life is so important. We live as well as we choose. I love this simple dish; it’s very similar to ones I create. And your last post with the snazzy glasses was equally appealing. You and your mom are on the right track!
Sometimes the most spontaneous of ideas are the best, or in this instance, the yummiest!
Love this combo, and the addition of the blue corn chips is a nice touch.

I know exactly what you mean when dinner seems dauting and all you want to do is just pull out randoms and eat whats available! But that looks simply divine. And Mr. Sofus is way too cute for his own good.
