I think that this salad is fresh, sweet and sour perfection.
Especially if you happen to be able to get ahold of Danish strawberries, which are truly so delicious I think I could eat them forever. Just the smell of them is so intoxicatingly sweet and fresh – yummmm. Add feta, spinach, and a splash of balsamic vinegar, and you my friend, are in for a treat.



I hope you make this salad soon – it’s amazingly simple and lovely, and your roommate, your guests, or even just your own tastebuds, will thank you for it.
Summer strawberry and spinach salad
- Spinach (rinsed and dry)
- Sliced strawberries*
- Feta cheese (virtually nonfat preferably)
- Balsamic vinegar
Adjust the quantities of the above ingredients to suit your taste and necessary number of servings. Top spinach leaves with strawberry slices and crumbled feta, then drizzle lightly with balsamic vinegar. Easy peasy.
*If you’re in the first two stages of the Dukan diet, you can omit or limit the berries in this salad – though I think you deserve at least one! It can’t hurt… but don’t tell Dr. Dukan I said that

Last night I went out with my colleagues and after I finished two Dukan friendly courses of meat and veggies, I ended my meal with -
1. The cheese plate
2. 2/3 of the best tiramisu I have ever had outside of Italy


Bad, bad girl. Ohh, but it felt so good… and I didn’t gain an ounce, so no regrets!
But since I can’t indulge in such {high fat} delicacies all the time, I want to share with you another Dukan dessert recipe that’s fresh and summery and not one bit sinful.
The dessert above is a layered treat: first a layer of vanilla pudding (using this recipe and omitting the cinnamon and rum in favor of vanilla bean) and then a layer of lemon curd, and then a dollop of sweetened fromage frais. You shouldn’t eat much lemon on the Dukan diet, but a dash of this curd will be more than enough to satisfy your craving for zesty goodness.

Koldskål is a delicious and simple Danish summer treat.
It’s as easy to make as it is to eat two or three bowls of in one sitting – and with lowfat ingredients and a little sweetener, two or three bowls won’t hurt one bit.



Traditionally, Koldskål is made with buttermilk, eggs and sugar. For this recipe, I added lemon juice and zest which made it all the more fresh. You can also mix in vanilla or crushed strawberries – the possibilities are endless!
Koldskål is usually served with crushed cookies called kammerjunker – but being deep in the Dukan diet, I chose to top mine with – what else? – wheat bran. Koldskål is best served very cold on the hottest of days, and can be enjoyed any time – even for dinner!

Today K and I had his father and brother over for the second day of Easter. After sharing a traditional Danish Easter lunch by the beach on Saturday, I thought this was the perfect opportunity to share some American Easter traditions.
Therefore, our “traditional” dinner included a honey-glazed ham, deviled eggs, proscuitto wrapped asparagus, orange scented green beans, twice-baked potatoes and lemon blueberry cheesecake (Dukan friendly too – find the recipe here).
And for decoration through it all – lovely, little eggs.



I hope you all had an amazing Easter weekend! Tomorrow I look forward to sharing more of K and I’s “staycation” this weekend, which began Saturday at the beach.
